Job Summary

Oversees the preparation of baking pastries, cakes and breads in a commercial kitchen for the dining halls and catering operations. Oversees food quality, station checklists, and other duties related to kitchen organization. Assists in supervising the level I and II Bakers. Leads continuous training in food safety and quality control. Demonstrates significant experience and knowledge of equipment and safety policies, waste management and inventory control measures. May test new recipes.

Responsibilities

1. Leads the preparation of baked pastries, cakes, desserts and breads

2. Specific experience in preparing bakery items from scratch, decorating and frosting cakes, recipe scaling and testing new recipes

3. Performs general baking duties for the dining halls and/or catering operations

4. Performs preparation and sanitation duties as required

5. Assists in supervising assigned staff

6. Leads continuous training in food safety and quality control

7. Assists in testing new recipes

8. Oversees food quality, station checklists, and other duties related to bakeshop organization

Required Qualifications

Educational Requirements
High school diploma or equivalent

Other Required Qualifications
Current and valid ServSafe Certification preferred (must be able obtain within one (1) year of employment)

Required Experience
Two (2) years of related experience

Preferred Qualifications

Additional Preferred Qualifications
Culinary certificate in baking from culinary arts program preferred

Preferred Experience
Previous experience in an institutional or commercial operation
Previous experience in a lead or supervisory role

Proposed Salary

Knowledge, Skills, & Abilities

ABILITIES
Able to maintain records of output, quantities of ingredients used, and supplies on hand
Able to operate the bakeshop during absence of Pastry Chef
Able to handle multiple tasks or projects at one time meeting assigned deadlines

KNOWLEDGE
Knowledge of the types and grades of ingredients used in general pastry and bread making
Knowledge of equipment and methods used in baking in a commercial kitchen
Knowledge of food safety and sanitation standards used for large-scale operations
Knowledge of basic math
Knowledge of food services terminology

SKILLS
Excellent interpersonal, initiative, teamwork, problem solving, independent judgment, organization, communication (verbal and written), time management, project management and presentation skills
Proficient with computer applications and programs associated with the position (i.e., Microsoft Office suite)
Strong attention to detail and follow up skills
Strong customer service skills and phone and e-mail etiquette
