Position Highlights
The AZ Student Unions is seeking a full-time Culinary And Food Services Manager I (Sous Chef) to join our team. The Sous Chef assists in the development and implementation of current menu items and cooking techniques. This position is located in the Production Kitchen at the Arizona Student Unions. This position supervises the daily operation of a large production area. The candidate for this position must have extensive knowledge of Food and Beverage preparation and presentation and excellent interpersonal skills. This position will require the flexibility to work varied shifts to include weekends, holidays, and a weekly schedule of 50+/- hours.
The Arizona Student Unions consist of both the Student Union Memorial Center (SUMC) and the Park Student Union, as well as Highland Market and a number of convenience stores and food stops around campus. In addition to campus dining services and catering, the Arizona Student Unions also run mall scheduling, concessions at athletic events, Fast Copy & Design, Games Room, the Gallagher Theatre, and a Post Office Contract Unit.
The Student Union Memorial Center is one of the largest student unions in the United States. The SUMC contains everything students need - restaurants, retail spaces, a bank, lounges, study/meeting rooms, a computer lab, and a movie theater. SUMC is often referred to as the "living room" of the University.

Duties & Responsibilities
- Assumes complete charge of kitchen on respective shifts
- Supervises and maintains cooking standards and
techniques of line level employees - Maintains safety and Health Department Standards
- Works all stations as required
- Provides leadership for subordinates and enforces
proper procedures - Assumes the accountability and responsibilities of
Supervisors in their absence - Participates in menu design and implementation
- Prepares orders for daily and up coming functions
- Ensures proper usage and rotation of all food items
- Checks freshness and quality of food and presentation
- Maintains proper inventory levels
- Oversees all food preparation and production in hot and
cold kitchens - Expedites all event food orders. Ensures proper usage
and rotation of all food items - Coordinates various production activities to meet
established serving times - Tastes prepared foods, adjusts seasoning and
consistency - Communicates to FoodPro team of recipe changes or
suggestions of improvement - Oversees the visual presentation of foods for Cash-op
and catered events, and takes immediate action to correct problems - Communicates with Catering Director or senior Catering
Supervisor regarding catered function timing - Ensures that quality products are utilized for food
preparation and sources out new and cost efficient items when necessary - Oversees the utilization and organization of all
prepared and unprepared food in the production kitchen - Communicates effectively with Production Kitchen staff:
outlines goals, expectations, daily duties and operational requirements,
provides leadership for staff - Must be able to transport/move a maximum of 50 pounds
- Must be able to work varied shifts to include weekends,
holidays, and a weekly schedule of 50+/- hour - ServSafe or other food safety certification required
- Performs other job related duties as assigned
Knowledge, Skills and Abilities:
- Knowledge of food and beverage preparation and
presentation - Knowledge of large production kitchen production
equipment - Knowledge of supervisory practices and principles
- Knowledge of sanitation and food quality standards
- Ability to lift/move/transport up to 50 pounds
- Skills in basic math
- Ability to communicate effectively
Minimum Qualifications
- Bachelor's degree or equivalent advanced learning
attained through professional level experience required. - Minimum of 3 years of related work experience or
equivalent combination of education and work experience required. - Must be able to work varied shifts to include
weekends, holidays, and a weekly schedule of 50+/- hour.
