Job Description

Manages and directs all aspects of operating a university centralized Pre-Prep and Bake Shop under the direction of the Assistant Director for Southgate Food Center. Ensures high quality food production with recipe development, menu planning, budgeting, preparation, and presentation. Maintains high standards in food preparation, quality, taste, creativity, variety and presentation. Directs the central bakery staff with an emphasis on efficiency and quality product. Manages and directs a centralized Pre-Prep to produce prepackaged food selections (Grab n' Gobble and YTG programs), processed fruits and vegetables, and sliced meats and cheeses for the dining centers. Direct a program for preserving food items, to include dehydrating, freezing, and preserving of locally grown food items (to include Homefield Farm). Maintains a high level of customer satisfaction by being responsive to customer needs and executing daily production and exciting and entertaining special events.

Required Qualifications

Degree in culinary arts or baking science, or European style apprenticeship program or American Culinary Federation certification and/or significant related experience and training. Previous experience and comprehensive knowledge of culinary techniques, menu planning, recipe and menu development, food ordering, use of general and commercial kitchen equipment, preparation, presentation, pricing, and supervision of kitchen personnel. Strong supervision and leadership skills with the ability to communicate effectively with all levels of personnel and customer base. Experience with planning and coordinating special events.

Preferred Qualifications

Experience using a computer including Windows, Microsoft Office including Word, Excel, PowerPoint, and Outlook, inventory and food production software system (FoodPro), payroll software system (such as Banner and/or TimeClock Plus). ServSafe and HACCP certification.
